The BEST healthy AND delicious Superbowl recipes
Superbowl Sunday is known for the apps, the beer, and the endless munching over football cheers and commercial laughter.
If you’re hosting (or contributing to a pot luck party), you can have a ton of control over your food choices.
That means HEALTHY & DELICIOUS!
As a Holistic Nutritionist and busy mom of 3 little ones, it’s always important for me to find the balance of providing healthy meals to my family and making sure the food tastes great too.
Here are a few fan favs for you to try during Superbowl this year:
Healthy Turkey Chili
Ingredients
2 teaspoons olive oil
1 yellow onion, chopped
3 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound extra lean ground turkey or chicken (99%)
4 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt, plus more to taste
1 (28-ounce) can diced organic tomatoes or crushed tomatoes
3/4 cups chicken broth
2 (15 oz) cans dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained
For topping: cheese, avocado, tortilla chips, cilantro
Directions (for crockpot)
Heat olive oil and brown the turkey and onions in saute pan.
Add all ingredients into crockpot and cook high 3-4 hours or low 6-7 hours, until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.
Garnish with anything you'd like. Makes 6 servings, about 1 1/2 cups each.
Mini Avocado & Hummus Quesadilla
Ingredients
4 whole wheat tortillas
1/4 cup hummus
1/4 teaspoon ground cumin
1 tablespoon minced cilantro
1/2 avocado cut into 12 slices
1 1/2 ounces crumbled queso fresco
Directions
Using a 2½-inch circle cookie cutter (or a glass with a 3½-inch circumference and a small knife), cut 3 circles from each tortilla.
In a small bowl, stir together the hummus, cumin and cilantro.
Spread 1 teaspoon of the hummus mixture on each tortilla circle. Divide the avocado slices and queso fresco evenly between the quesadillas, arranging them on one half of the tortilla circles.
Heat a large skillet over medium heat. Place several quesadillas in the pan and cook until the tortillas are golden brown, 2 to 3 minutes per side.
Repeat with the remaining quesadillas. Serve.
Zucchini Cheesy Bread
Ingredients
3 medium zucchini, or about 4 cups grated zucchini
2 large eggs
2 cloves garlic, minced
1/2 tsp dried oregano
3 cup shredded mozzarella, divided
1/2 cup freshly grated Parmesan
1/4 cup cornstarch (optional)
kosher salt
Freshly ground black pepper
pinch of crushed red pepper flakes
2 tsp. freshly chopped parsley
Marinara, for dipping
Directions
Preheat oven to 425º and line a baking sheet with parchment.
On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
Transfer zucchini to a large bowl with eggs, garlic, oregano, 1 cup mozzarella, Parmesan, and cornstarch and season with salt and pepper. Stir until completely combined.
Transfer “dough” to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
Sprinkle with remaining 2 cups mozzarella, crushed red pepper flakes, and parsley and bake until cheese is melted, 8 to 10 minutes more.
Slice and serve with marinara.
Zucchini Tots
Ingredients
2 medium zucchini (12 oz.)
1 large egg
1/2 cup grated pecorino
1/2 cup panko
1 clove garlic, crushed with press
1/2 tsp. black pepper
Directions
Preheat oven to 400°F.
Coat one large baking sheet with nonstick cooking spray.
Shred zucchini and squeeze dry with paper towels. Mix shredded zucchini with egg, pecorino, panko, garlic, and pepper.
Use a small cookie scoop to drop tablespoonfuls of mixture onto prepared baking sheet. Then, shape each into a small log.
Bake in 400°F oven, turning halfway through, until golden brown, 20 to 22 minutes.
