Drool over these refreshing summer popsicles

My car thermometer hit 99 degrees the other day!

99. Freakin. Degrees. Wowsas, that's hot. And if you're from the northeast, the humidity that makes my hair frizz in the most uncontrollable way, makes it feel like it's 115 and you're just swimming through the stifling sauna-like air.

On these sweaty, hot days, we all just want to reach for a refreshing treat.

To start, MY FAVORITE POPSICLE MOLD IS HERE!

Here are a few delish and easy popsicle recipes you can try at home with your kids:

CHOCOLATE COCONUT BANANA

INGREDIENTS

INSTRUCTIONS

  1. Mix bananas, coconut milk, vanilla, & salt in a blender/food processor.

  2. Blend till mixed.

  3. Toast coconut flakes in a pan over medium heat for about 5 min.

  4. Pour liquid mixture into popsicle molds, top with toasted coconut, and freeze for 6+ hours.

  5. Before eating, slowly melt chocolate chips in a glass bowl over a saucepan of boiling water, then dip into chocolate and freeze for 5 minutes.

STRAWBERRY SHORTCAKE

INGREDIENTS

  • 6 cups fresh or frozen strawberries

  • 3 cups organic vanilla full-fat yogurt (or buy plain and add some honey & vanilla)

  • 1 cup organic macadamia nuts, chopped

INSTRUCTIONS

  1. Mix strawberries in a blender/food processor.

  2. Layer yogurt and pureed strawberries in popsicle molds and freeze for 6+ hours.

  3. Remove from molds and roll in macadamia nuts.

CUCUMBER LIME MOJITSICLE

INGREDIENTS

  • 4 cucumbers

  • 2 sprigs of fresh mint or 2 drops of peppermint oil

  • 1 squeeze of fresh lime juice

  • 3 TB honey

INSTRUCTIONS

  1. Mix cucumbers in a blender/food processor.

  2. Strain pureed cucumbers through a strainer.

  3. Mince 6-8 mint leaves and blend with strained cucumber "juice".

  4. Add squeeze of lime juice & honey.

  5. Place a mint leaf in each popsicle if desired.

  6. Pour in popsicle molds and freeze for 6+ hours.

ORANGE ROSEMARY

INGREDIENTS

  • 6 fresh oranges

  • 3 sprigs of fresh rosemary

INSTRUCTIONS

  1. Juice the oranges.

  2. Add the leaves from the sprigs of rosemary and pour in popsicle molds and freeze for 6+ hours.
